Spaghetti Ratatouille with Italian
Sausage
|
1 lb. spaghetti (or linguine)
½ lb. Italian sausage (remove casings and crumble)
3 small zucchini, diced
1 small eggplant, diced
2 cups garlic pasta sauce
1 tsp. oregano
½ tsp. basil
¼ cup pitted black olives, sliced
1 tbsp. chopped fresh parsley
grated parmesan cheese
Cook pasta according to directions. Meanwhile, cook sausage in a
pan until brown. Drain fat. Add zucchini, eggplant, sauce,
oregano and basil. Bring to a boil, stirring. Cover and simmer
until vegetables are tender, approximately 20 minutes. Add
olives. Top with parsley and parmesan cheese. |

Spaghetti Pie
|
6 oz. spaghetti (about 3 cups cooked)
2 tbsp butter or margarine
1/3 cup grated parmesan cheese
2 well beaten eggs
1 cup cottage cheese
1 lb. ground beef
½ cup chopped onions
¼ cup chopped green pepper
1 (8 oz.) can tomatoes, chopped
1 (6 oz.) can tomato paste
1 tsp sugar
1 tsp. dried oregano
½ tsp. garlic salt
½ cup shredded mozzarella cheese
Cook spaghetti according to directions on package; drain. Stir
in butter, then add parmesan cheese and eggs. Press spaghetti
mix into buttered 10 inch pie plate. Spread cottage cheese over
spaghetti crust.
Cook beef, onion and green pepper in skillet until beef is brown
and vegetables are tender. Drain fat. Stir in tomatoes, tomato
paste, sugar, oregano and garlic salt. Heat mixture. Scoop
mixture onto spaghetti and cottage cheese. Bake, uncovered at
350°F for 20 minutes. Spread mozzerlla cheese on top. Bake 5
more minutes. Serves 6. |

Quick and Easy Spaghetti
|
1 tbsp. white vinegar
1 tsp. salt
1lb. spaghetti
3 tbsp. butter or margarine
¼ cup grated parmesan cheese
14 cup grated mozzarella cheese
¼ cup grated Gruyere or Swiss cheese
¼ tsp. celery seed
pepper
dash paprika
Bring 1 gallon water, vinegar and salt to full boil in large
saucepan. Add pasta and stir occasionally. Follow package
directions. When done, drain, reserving ¼ cup liquid. Rinse
pasta with cold water and set aside.
Melt butter in same saucepan. Combine cheeses and reserved
liquid. Add pasta and seasonings; mix well. Cook approximately 2
minutes over medium heat, stirring constantly. Sprinkle with
paprika and serve.
