Quick Shredded Hash Browns
2 potatoes, unpeeled and shredded
4 cups water
1 tbsp butter or margarine
salt and pepper
Pat shredded potatoes with paper towel to remove liquid.
Bring water to a boil in saucepan on stove. Reduce to medium
heat and add potatoes. Cook 2 to 3 minutes; drain. Press again
with paper towels to remove liquid.
Melt butter in pan on stove. Add shredded potatoes and cook for
about 15 minutes, or until golden brown. Toss while cooking.
Season.
Shredded Hash Brown Potatoes
2 large potatoes
2 tbsp. canola oil
2 tbsp. butter or margarine
Salt and pepper
Wash potatoes. Without peeling, grate with the shred-size. Place
oil and butter in a large skillet, and heat to medium-high. Add
potatoes and press them with a spatula to spread them evenly in
pan. Sprinkle salt and pepper over top. Fry potatoes until the
bottom is crispy and brown, about 5 minutes. Flip the potatoes,
and fry for 5 more minutes, until crispy and browned on opposite
side.
Shredded Hash Browns with Bacon
2 large potatoes, grated
4 slices thick bacon, cooked and crumbled
2 tbsp. reserved bacon grease
1 medium onion, finely chopped
1 clove garlic, crushed
Salt and pepper
Cook bacon. Remove from pan and crumble after cooling.
Meanwhile, saute the onion and garlic in reserved bacon grease
until onions are soft. Add the potatoes, and cook until tender.
Sprinkle with crumbled bacon, salt and pepper.
