Zesty Pizza Potatoes

6 large potatoes
2 tbsp. butter or margarine
garlic powder (to taste)
1 tsp. salt
1 tsp. pepper
2 onions, sliced into rings
1 cup grated parmesan cheese
2 cups grated cheddar cheese

Cut potatoes into ¼ inch slices. Place on cookie sheets in single layers. Top with a little butter on each slice. Sprinkle garlic powder, chili powder, salt and pepper over the potatoes. Lay an onion ring on each slice and sprinkle with cheeses. Bake at 400° for 30 to 40 minutes, until tender. Serves 6 to 8.

Scalloped Potatoes

4 cups potatoes, thinly sliced
3/4 cup minced onion
2 tbsp. flour
1 tsp. salt
1/8 tsp. pepper
2 tbsp. butter or margarine
1 ½ cups hot milk
dash paprika

Grease a 2 quart casserole dish, and layer ½ potatoes inside. Cover potatoes with ½ onions. Mix together flour, salt and pepper. Sprinkle ½ flour mixture on onion layer. Dot with ½ the butter. Repeat layers, and again dot with butter. Pour the milk over top. Sprinkle with paprika. Cover and bake at 375° for 45 minutes; uncover and bake for 15 more minutes. Serves 4.

Cheesy Scalloped Potatoes

5 cups sliced cooked potatoes (5 medium)
¼ cup butter or margarine
¼ cup flour
2 cups milk
1 cup grated cheddar cheese
½ tsp. salt
½ cup grated parmesan cheese
½ cup buttered bread crumbs

Melt butter in a large pan over low heat. Stir in flour until smooth; slowly add milk, and stir until mixture thickens. Remove from heat. Add salt and both cheeses. Fold in potatoes. Place in a greased casserole dish, and top with bread crumbs. Bake uncovered, at 350° for 30 minutes. Serves 6.

These burgers are chock full of spicy peppers. When handling the chile peppers be sure to wear gloves, and don't let the pepper oils come in contact with your eyes. Serve on buns with your favorite toppings.
