Basic Spaghetti Pasta Sauce
|
2 tbsp. vegetable oil
1 tbsp. melted butter or margarine
2 onions, finely chopped
2 garlic cloves, chopped
12 large tomatoes, peeled and chopped
3 parsley sprigs
1 tsp. oregano
½ tsp. thyme1 bay leaf
¼ tsp. crushed chillies
5 ½ oz. (156 ml) can tomato paste
salt and pepper
pinch sugar
Heat oil and butter in skillet. Add onions and garlic; cover and
cook 4 to 5 minutes over low heat. Stir in tomatoes, seasonings
parsley and sugar. Cook about 15 minutes, stirring occasionally.
Remove cover and stir in tomato paste. Cook uncovered 10 to 15
minutes. Pour through sieve. Yields about 4 cups. |

Meat Sauce for Pasta
|
2 tbsp. olive oil
1 onion, chopped
1 carrot, chopped small
1 celery stalk, diced small
3 garlic cloves, minced
1 lb. lean ground beef
¼ lb. sausage meat
¼ tsp. crushed chillies
½ tsp. thyme
½ tsp. oregano
¼ tsp chili powder
¼ tsp. sugar
1 bay leaf
1 cup dry white wine Chardonnay
2 28 oz. cans tomatoes, drained and chopped
5 ½ oz. can tomato paste
salt and pepper
Heat oil in large pan. Add onion, carrot, celery and garlic.
Cover and cook for 3 minute over medium heat. Add beef and
sausage. Mix and cook for 4 minutes, uncovered. Add seasonings,
sugar and wine; cook for 3 more minutes over high heat. Stir in
tomatoes, tomato paste and seasoning; Boil. Partially cover, and
simmer for about 1 hour, stirring occasionally. |
