Pasta Salad
|
1 ½ cups
Fusilli pasta
¼ cup vegetable oil
1 tbsp. lemon juice
¼ tsp. dried oregano
1 clove garlic, chopped
1 cup crumbled feta cheese
1 tomato, sliced into wedges
1 small cucumber, seeded, cubed
½ cup green pepper strips
½ cup radishes, sliced
10 black olives
2 tbsp. sliced green onions
2 tbsp. chopped parsley
Cook pasta according to directions; drain; cool. Put oil, lemon
juice, oregano and garlic in blender and mix together until
creamy. Combine pasta and remaining ingredients in a large bowl.
Pour creamy dressing over; toss to coat. Season with salt and
pepper if desired. Chill to blend flavors. |

Vegetable Salad

1 pkg. (12
oz.) pasta (choose bows, macaroni, twist macaroni, egg noodles,
or shells, etc.)
1 ¼ cup Italian dressing
½ cup mayonnaise
½ tsp. basil leaves
5 cups assorted fresh vegetables (any combination of chopped
cucumber, tomato, celery, peppers, sliced mushrooms, carrots,
broccoli, cauliflower)
Cook noodles according to directions; drain; rinse with cold
water to cool. Combine Italian dressing, mayonnaise and basil in
a large bowl. Add mixed vegetables and stir to coat. Add noodles
and toss. Cover bowl and chill. |

Classic
Pasta Salad
|
1 cup
mayonnaise
2 tbsp. vinegar
1 tbsp. prepared mustard
1 tsp. sugar
1tsp. salt
¼ tsp. pepper
8 oz. any short pasta, cooked, drained
¾ cup sliced celery
1 cup chopped green or red pepper
¼ cup chopped onion
Combine first 6 ingredients. Stir in remaining ingredients.
Cover and chill. |
