Hash Brown Casserole
2 lbs. frozen hash browns
8 oz. sour cream
1 can creamed soup (try cream of potato, cream of mushroom,
cream of chicken or cream of celery)
1 small onion, chopped
¼ cup butter or margarine, melted
2 ½ cups shredded cheese
Salt and pepper
Combine all ingredients and put in a 2 quart casserole dish. Top
with the melted butter. Bake at 350°F for 45 – 50 minutes.
Cheese-Baked Hash Browns
2 lbs. hash browns
1 can cream of mushroom soup
2 cups sour cream
½ cup onion, chopped
½ cup butter or margarine, melted
2 cups shredded cheddar cheese
1 cup crushed Ritz crackers or Sociable crackers
Place hash browns into a large bowl. Add soup, sour cream,
onion, butter and cheese and mix well. Spread evenly into a 13 X
9 inch ungreased baking pan. Sprinkle crushed crackers over top.
Bake 375°F for 1 hour or until brown.
Hash Brown Rounds
2 cups mashed potatoes
1 egg, beaten
1 medium onion, finely chopped
½ tsp. salt
¼ tsp. pepper
2 tbsp. olive oil
In a medium-sized bowl, combine egg and onion with mashed
potatoes. Add salt and pepper.
Heat olive oil in frying pan at medium temperature. Place potato
mixture into pan in 4 inch circles. Flatten potato mixture to
about ½ inch thick. Brown bottom, flip potato patty and brown
other side.
