Stuffed Baked Potatoes
4 potatoes
½ cup sliced green onions
¼ cup butter
1 tsp. salt
pinch of pepper
2 tbsp. butter or margarine
1/3 cup hot milk
grated cheese
Arrange potatoes on a pan, and bake in oven at 400° for 1 hour
or until tender.
Cut baked potato in half lengthwise, and scoop out the pulp
without breaking the skin. Place in a large bowl. Sauté onions
in ¼ butter until tender. Mash potato, and add seasonings and
onions. Add butter and milk and beat until fluffy. Return to
shells, and sprinkle with grated cheese. Reheat at 400° until
brown; approximately 15 minutes.
Baked Potatoes with Pizza Topping
3 large baking potatoes
½ lb. ground beef
1 14 oz. jar spaghetti sauce
1 7 oz. can corn, drained
¼ cup shredded mozzarella cheese
Bake potatoes in 400°F oven for 1 hour or until tender.
Meanwhile, cook ground beef in a pan until no longer pink. Add
spaghetti sauce and corn, cook about 5 more minutes or until
very hot. Cut potatoes in half lengthwise, top with meat mixture
and cheese. Serves 6.
Sweet Potatoes with Garlic
4 large sweet potatoes
4 slices cooked crisp bacon, chopped
2 garlic cloves, crushed and chopped
1 tbsp. chopped parsley
4 tbsp. sour cream
salt and pepper
Bake potatoes at 400° for 1 hour or until tender.
Combine remaining ingredients, and season with salt and pepper.
Cut baked potatoes in half lengthwise, and top with seasoned
mixture.
